Olives and Pickles
There are several botanical varieties of Spanish olive trees that produce table olives. The finest table olives are ‘Manzanilla finas’, green, fat, sweet and meaty with a fine texture, grown in Southern Spain. The Empeltre olive from Aragon is a moist black olive, with liquorice undertones.
We supply both the Manzanilla (pitted, stuffed and whole) and black Empeltre (whole) varieties of olives. These are available in both jars and 2.5kg net tins.
Our black olive paté is a taste sensation, made only from Empeltre olives and virgin olive oil.
For those who like spicy pickles, we have Majorcan Banderillas; a combination of onion, red pepper, olive, chilli and gherkin, already on the skewer in the jar! |

Anchovies
Anchovies fished off the north coast of Spain from the Cantabrian sea are considered a delicacy. Because of the well-known quality of the local fish (engraulis encrausichoulus), our product is not comparable to any other in the world.
Our anchovy fillets are made from fresh fish caught during the high season (April to July) by local fishermen. Specialised buyers select the best product as it comes from the sea and within hours of landing the fish are cleaned and placed into barrels to age to perfect the finest Anchovies in the world.
Anchovies can be used in many different recipes: Salads, pizzas, pasta, sandwiches, … in starters or main courses; or just be eaten alone with bread as a delicious snack.

Ham
We carry on family traditions producing the best Serrano and Iberico cured ham Spain has to offer. Our salting process, the pressing of the meat and the post-salting phase of the process are done using the time-honoured, traditional methods of the region. Our hams are then matured naturally -without accelerating the process - in the ideal microclimate of the Teruel hills.
D’elitte offers you three different ham presentations: on the bone with skin, off the bone without skin, pre-sliced (100g), and four different ranges:
Serrano, Teruel Ham (D.O.), Iberic and “Bellota”(Acorn) Iberic. |

Chorizo
Spain’s most typical and popular sausage is full of flavour, rusty red in colour and aromatic with red pepper and garlic.
In Spain, all chorizos are graded according to meat, fat an humidity content. ‘Extra’ means the highest quality. The key ingredient is ‘pimentón’ or paprika – often smoked, finely ground paprika.
Blended with pimentón are garlic, herbs, spices and salt, Chorizos are used extensively in regional stews, sandwiches and tapas.
D’elitte offers two flavours of chorizo- ‘picante (spicy)’ and ‘suave (not spicy)’. These are available in attractive ‘sartas’ which are 200g horseshoe shaped, or in 1.5kg large slicing sticks. These are fully cured and ready to eat.
We also offer semi-cured chorizo, better suited as a cooking chorizo. |

Cheese
Manchego is the best known sheep’s milk cheese in Spain. The shape of this cheese is very characteristic and defined, due to the traditional use of Esparto grass moulds which imprints a zigzag pattern on the cylinder sides. The small wooden boards used for pressing the cheese imprints the typical wheat ear pattern on the top and bottom, the Manchego trade mark.
This cheese has a defined ‘parmesan’ flavour to it. The semi-cured (3-4 months) is perfect for sandwiches, and the cured (6-8 months) is great with biscuits or used in recipes.
Available in 3kg (approx) rounds, or 230g vac-sealed wedges. |
